Baldío

Baldío is a Mexican restaurant in Mexico City (Condesa), $$$$; open Mon–Sat 14:00–23:00; closed Sun; book at https://www.opentable.com/r/baldio-ciudad-de-mexico.

Mexico City's first and only Michelin Green Star-zero-waste cooking from chinampas to plate. Chef Laura Cabrera Hernández's Condesa restaurant is the first in Mexico City with a Michelin Green Star. Everything is sourced from 50+ regenerative farms, fermentation takes over where leftovers might be, and dishes like Chinamperos vegetables with green pipián, Grassfed Pork with Tamarind Mole, and Chocolate Sandwich prove sustainability and serious cooking belong in the same room. Baldío holds a Michelin Green Star in the 2026 Michelin Guide, the distinction Michelin introduced globally in 2020 to recognize sustainability leadership as a category separate from culinary execution. Chef Laura Cabrera Hernández's sourcing from more than 50 regenerative farms made it the first Mexico City restaurant to receive it.
